A Truly Delicious Dish
There is a little bit of fiddling at the beginning but straight-forward from there.
Everything gets cooked in the one Dish, so put in the Oven and forget. Saves on washing up, PERFECT
If you haven’t tried Tin Beans before this is a good way to introduce the Family to them.
My magic word is DISGUISE.
If you don’t have some of the Vegetables I suggest add whatever you have in the Fridge. Actually it is an excellent Dish to use up the left-overs in the Vegetable Draw.
The bigger the Dish you use, the more Vegetables you can add. If using a bigger Dish perhaps use another Tin of Tomatoes.
I used Italian Tomatoes the first few times but since then have used Moroccan Style Tomatoes and the flavours were even more delicious.
One Dish Wonder
- 2 Carrots, big chunks
- 1 Red Kumara, cut into thick slices
- 1 Orange Kumara, cut into thick slices
- 2 Cloves Garlic, crushed
- 1 Onion, chopped finely
- 8-10 Mushrooms, left whole
- about 8-10 Brussel-sprouts, cut in half
- 1/4-1/2 Cauliflower, cut into small pieces
- 1/4-1/2 Broccoli, cut into small pieces
- 1 390g Tin Butter Beans
- 1 400g Tin Italian Diced Tomatoes
- 1/2 cup Frozen Peas and Corn Mix
- 1 340g Chicken Breast, sliced into big chunks
- 1/2 teaspoon Ground Cumin
- Salt and Black-peppercorns for seasoning
- 1 tablespoon Avocado Oil
- sprinkle of Dried Mixed Herbs for seasoning
- extra drizzle of Avocado Oil
- Lemon Juice
Preheat the Oven to 180ºC.
In a large Pan add the Avocado Oil, finely chopped Onions, Garlic and Ground Cumin.
Cook for about 5 minutes, stirring to coat the Vegetables.
Add the Tomatoes, Butter Beans and Chicken, cook for about 10 minutes.
Transfer to an Oven proof Dish and scatter the Vegetables around the Dish amongst the Tomato Juices.
Season with Sea Salt and Black-pepper, give a good squeeze of Lemon Juice over the top.
Sprinkle over the Dried Herbs and add a drizzle of Oil.
Bake for about 30-45 minutes or until Vegetables are cooked.
My Husband loves Cheese so he grated some Parmigiano Reggiano over the top.
