Spicy Fruit Loaf is always a favourite with a cup of Tea.
This Gluten Free Spicy Fruit Loaf with a zing of Mixed Spice, a nutty flavour of Ground Linseed and Walnut is nice with a freshly brewed cup of Tea.
A Loaf is a crowd-pleaser always, whether it’s for Afternoon Tea or a few slices in a Lunch Box. If Loaf is left over in our House I warm it slightly and serve it as a Dessert with a dollop of Yoghurt on the side.
Spicy Fruit Loaf
- 1/2 cup Dates, chopped
- 1/2 cup Sultanas
- 1/2 cup Currants
- 1/2 cup Raisins
- 1/4 cup Walnuts, roughly chopped
- 1 cup Water
- 50g Butter
- 1/4 cup Honey
- 1/2 teaspoon Baking Soda
- 2 cups Gluten Free Self-raising Flour
- 1/2 cup Ground Linseed
- 2 Eggs, lightly beaten
- 1 teaspoon Mixed Spice
Preheat the Oven to 160ºC.
Line a 25cm x 14cm Loaf Tin with Baking Paper.
In a Pot place Dates, Water, Butter, and Honey. Bring to the boil then turn down heat and simmer for 2 minutes. Take off heat and add Baking Soda and Ground Linseed. Stir and leave to cool for a few minutes.
Stir in the Sultanas, Currants, Raisins, lightly beaten Eggs and Walnuts.
Add Flour and Mixed Spice stirring only enough to combine all ingredients. If you over mix, the Loaf may be a little tough and doughy when cooked.
Pour into your prepared Loaf Tin, smooth out the top evenly.
Place into your Oven and bake for 50 – 60 minutes or until nice and golden.
Cool for about 5 minutes if wanting to serve warm. Spread with your favourite topping or leave plain.
