Frittata

This is a good Dish for using up those left-over Vegetables out of your Vegetable Bin in the Fridge.

Construct this Dish in no time and accompany it with some sort of Protein and you have a quick and easy square Meal.
I think it looks awesome when sliced, you can see all the layers of colourful Vegetables.
Eat straight away while still hot or make and have cold for a Picnic sliced into big hunks with lavishing amounts of Mayo, Chutney or Pesto.
Fresh Cherry Tomatoes a few slices of Chicken or Ham, even Turkey would be great.

What could be better on a hot Summer’s Day while sitting under a huge Tree on a soft Rug. A good Book, your Soul Mate and a Glass of chilled Refreshment.
Total bliss.
Not conscious of the World going by, that gentle breeze coming from the Sea.
A slight fragrance of Insect Repellent and Sun Block, dare I say it and your Sandy Toes being kissed by the Sun.

Is there such a place?….  I hope so

 

Frittata

  • 2 Kumera, cooked then sliced
  • 2 Carrots, grated
  • 1/2 Zucchini, sliced
  • 2 Spring Onions, sliced thinly
  • 4 medium Mushrooms, sliced
  • 1 cup frozen Peas and Corn
  • 1 small Capsicum, sliced
  • a good handful of Curly and Italian Parsley, chopped
  • 5 Eggs, beaten
  • Salt and cracked Black-Peppercorns, for seasoning
  • 2 teaspoons Wholegrain Mustard
  • Chives, chopped
  • Feta
  • Olive Oil
  • 2 tablespoons Sweet Chilli Sauce

 

Preheat the Oven to 180ºC and grease an 18cm x 30cm Oven Proof Dish.

I wash the Kumera under running cold water then slice into biggish pieces and place in a Micro-wave Proof Dish.

Place in the Mirco-wave and cook on high for about 2 minutes, test with a knife to see if soft in the centre.

When cooked slice thickly and put into a big Bowl.

Grate the Carrots, slice the Zucchini, Mushrooms, Spring Onions, Chives and Capsicum, place in same Bowl.

Chop the Parsley and add, any Herbs are fine.

Blanch the Peas and Corn for a few seconds, drain off the Water and add to the same Bowl, mix to combine.

In another Bowl whisk the Eggs, Salt and Pepper, Sweet Chilli Sauce and Wholegrain Mustard, pour over the Vegetables in the Bowl.

Mixing to coat well.

Grease a large Dish and tip the Bowl of Vegetable into this Dish spreading out every-thing evenly.

Dot the Feta over the top and drizzle with Olive Oil.

Cook for about 30 minutes or until golden brown and the centre is set.
