Running late, and want something quick and easy that is also Healthy?
With this Recipe you can use up any surplus ingredients that you might have in the Fridge.
Also a great way to disguise Vegetables that your Children might not like.
I have added diced Chicken but I can’t see why not add say, Sausages or even Fish.
Vegetable And Chicken Quiche
- 5 Eggs beaten
- 2 cups Milk
- 75g Butter melted
- 300g diced cooked Chicken Breast
- 3 Spring Onions chopped
- 2 cups frozen Peas Corn and Bean Mix
- 1 cup Mushrooms
- 2 Tomatoes diced
- 2 cups Silverbeet chopped
- 2 Carrots grated
- 1/2 cup grated cheese
- 1/2 cup Gluten Free Baking Mix
- 1/2 teaspoon Baking Powder
Dice the Chicken Breast and cook, set aside.
In a large bowl beat the Eggs, Milk and Butter together then add the sifted Flour Mix and Baking Powder, mix well together.
In the same bowl add the cooked Chicken, Spring Onions, frozen Peas Corn Bean Mix, Mushrooms, diced Tomatoes, grated Carrots and Silverbeet.
Mix until the ingredients are combined.
Spoon into a greased Oven-proof dish and top with grated Cheese.
Season with a good sprinkle of Tuscan Seasoning or if you prefer, cracked Black Pepper and Sea Salt.
Cook in a preheated oven at 180ºC for about 40-45 minutes or until the filling is set.
