Roasted Caramelised Cauliflower

Roasted Caramelised Cauliflower served as a Gluten Free side Dish is delicious.

Cauliflower is such a versatile Vegetable and is probably quite under-rated I reckon.
Roasting Cauliflower brings out the sweetness of the Vegetable.
When placed in an Oven Dish, seasoned, drizzled with Olive Oil then roasted, Cauliflower soaks up all those delicious flavours.

Cauliflower can be served:

  • Warm
  • At room temperature
  • Roasted Cauliflower
  • Cut into small pieces and served over a Salad
  • Stir-fry
  • Antipasto with other Roasted Vegetables
  • Topped with grated Parmesan Cheese then placed under the Grill

I can remember as a Child the only way we ate Cauliflower or any sort of Vegetable was boiled with an ample serving of Salt added to the Water.
My goodness the end result was tasteless, limp, and on occasions there was a brownish long thing found amongst the Florets.
The words” it won’t hurt you, it’s been cooked, eat it” echoed across the Dining Table.

At the moment Cauliflowers are plentiful in my Vegetable Garden, I’ve been giving surplus away to Friends and Family. If you happen to have a glut of them all at once and don’t want them to go to waste, a trick an old friend told me was to leave them in the Garden. Gently fold over the leaves of the Plant so they criss-cross over each other as to cover the Head. This stops the Sun from turning the Cauliflower a yellowish colour.
Doing this will allow you to have a few more days before having to harvest the Cauliflower. Also this allows the Cauliflower to be cut fresh from the Garden, it hasn’t been sitting in the Fridge for too long.


Roasted Caramelised Cauliflower 

  • Cauliflower Head of medium size
  • Olive Oil
  • Sea Salt
  • Ground Black-Pepper

 

Heat Oven to 190ºC.

Cut the Cauliflower into small Florets or cut into 1/4 inch thick slices. When cutting the Cauliflower little bits will crumble off. Add these bits of Cauliflower to the Bowl as well because when cooked these become crisp and crunchy.

Place the Cauliflower into a clean large Bowl, pour over the Oil and season with the Black-Pepper and Sea Salt.

Toss using your Hands making sure the Cauliflower is well coated.

In an Oven Dish spread the Cauliflower out in a single layer adding any remaining Oil and Seasoning from the Bowl.

Over the top of the Cauliflower drizzle with a little more Olive Oil.

Bake turning once during cooking.

Bake until tender and the edges of the Cauliflower have caramelised. About 25-30 minutes.
