A quick and easy Dessert
The word “Clafoutis” means a Dessert made with seasonal Fruits covered in a batter mixture which is then baked. This Dessert originates from a region in France called Limousin, located in central France on the Plateau of the Massif Central Mountain Range.
This Gluten Free Peach Clafoutis is so easy and quick to make. A good stand-by to have in your “Recipe Repertoire” just in case unexpected guests arrive.
Any sort of Fruit would be suitable, fresh or frozen.
Serve with a dollop of Greek Yoghurt or be a bit naughty and whip up some Cream.
- 1 400g can Sliced Peaches, drained
- 2 Eggs
- 1 tablespoon Honey
- 1/2 teaspoon Vanilla Essence
- 1/2 cup Gluten Free Self-raising Flour
- 1/4 cup Milk
- 2 tablespoons chopped Walnuts for topping
Heat Oven to 180ºC.
Grease an 18cm x 24cm Oven-Proof Dish.
Drain Peaches, cut up and place into Dish.
In a medium sized Bowl add Honey, Vanilla Essence and Eggs. Beat with an Electric Mixer until the mixture is smooth and creamy.
Add Milk and Flour, whisk gently.
Pour batter mixture over the Peaches evenly. Scatter with the chopped Walnuts.
Bake for 25-30 minutes or until the top is nice and golden.
