Lemon Curd Slice

A quick and easy Slice, guess what, you don’t even have to turn on the Oven.

This Slice would be great to make for a Gift, you know when you might be pressed for time or when you’re having a spur of the moment Afternoon Tea.

I have cheated a bit by buying a Jar of ready made Lemon Curd. I guess you could make your own Lemon Curd but this way the Slice is quick and easy to make.”Barkers” is the brand name, the Company is situated in a Town called Geraldine, in the South Island of New Zealand.

I cut the Slice into small pieces because it ‘s very decadent and rich.

 

Lemon Curd Slice

Base

  • 100g Butter
  • 1/2 cup Condensed Milk
  • 1/2 cup Coconut
  • 2 packets “Free from Gluten” Arrowroot Biscuits

 

Topping

  • 1  370g  Jar Lemon Curd “Barkers”
  • 2 cups Desiccated Coconut
  • 1 cup Shredded Coconut
  • 1 tablespoon Shredded Coconut

 

Base

Grease a 18cm x 28cm Slice Tin.

Crush the Biscuits by placing into a Plastic Bag and bashing it with a Rolling Pin.

Gently soften the Butter and add the Condensed Milk, stir to combine.

To the Butter and Condensed Milk, add the Coconut and crushed Biscuits, mix well.

When mixed, press these ingredients into your greased Tin.

I place the Base into the Fridge while I’m make the Topping, this allows it to set.

 

Topping

In a clean Bowl empty the Jar of Lemon Curd.

Into this Bowl add the Desiccated and Shredded Coconut mixing well to combine.

Take the Base out of the Fridge and spread the Topping over the Base spreading it out evenly.

Sprinkle 1 tablespoon of  Shredded Coconut over the top and press down lightly with your fingers.

Place in the Fridge and when set cut into small squares.

I store this Slice in an Air-tight container in the Fridge, otherwise the Slice become soft.
