This Juicy Tomato Medley with Fish Dish is a light succulent Gluten Free Meal, perfect for a hot Summer Evening.
While I made this Juicy Tomato Medley with Fish Dish using Fish Fillets, a whole Fish would be perfect. Popped on a BBQ and served with a light Salad, low stress, a must for this time of the Year.
This Dish would be absolutely wonderful for Christmas Lunch, lots of crusty Bread, Wine, Laughter, New Potatoes and Sweet Peas.
Better still if you and your Family happen to be Camping or at a Bach for the Holidays and the Blokes are Fishing all Day. This Recipe could be made by them to highlight the “Catch of The Day”. Mind you it might be handy to have some fresh Fillets in the Fridge just in case, (the one that got away, “The Fishy Tale”).
I made this Juicy Tomato Medley with Fish Dish in a Cast-iron Pan which was brilliant because when ready to be cooked in the Oven I just popped the Pan straight in. One Pan Dish and perfect for serving too, from Stove Top to Oven then Table.
All the delicious juices from the ingredients collect at the bottom of the Pan at the end of cooking. Save these and drizzle over the food when served along with a good squeeze of Lemon Juice and Lemon Zest.
Juicy Tomato Medley with Fish
- Olive Oil
- Sea Salt and Black Pepper
- Basil Leaves
- Drizzle Lemon Juice
- Zest of a Lemon
- 400g Tin Lentils, drained
- 1/2 cup Pitted Black Olives
- 2 teaspoons Capers
- 300g Cherry Tomatoes, assortment of colours
- 1/2 Red Onion, sliced thinly
- 2 Cloves Garlic, chopped
- 1 medium Yellow Zucchini, sliced
- 1 medium Green Zucchini, sliced
- 250-300g Gurnard Fillets
Preheat Oven to 180ºC.
Heat Olive Oil over medium heat in Cast-iron Pan, add sliced Red Onion and chopped Garlic. Cook until tender and soft.
Add Tomatoes, Zucchini, Capers, Olives, and another tablespoon of Oil to the Red Onions. Cook until Tomatoes start to blister. Season with Sea Salt and Black-Pepper.
Add drained and rinsed Lentils to the Tomato mixture, place Fish pieces around and amongst the Tomatoes. Drizzle with a little more Oil.
Place into the Oven to cook for about 20 minutes or until the Fish is cooked through.
When ready to serve, scatter over some Basil Leaves and add a good squeeze of Lemon Juice and grated Lemon Zest.
Soak up the juices with some crusty Bread if you wish.
