Creamy Hummus on Crackers or toasted Bread with your favourite toppings is always satisfying with a glass of Wine on a Summer evening.
I have tried many different recipes but always revert back to this one. It’s easy, quick, and not expensive.
You usually have the every-day ingredients in the cupboard. Chickpeas are so cheap and versatile so when getting the Groceries throw a couple of cans into the Trolley. An added bonus is that they are exceptionally good for you.
Put some Hummus into a small lidded container and along-side add some sliced Vegetables, this will add interest to School Lunch Boxes. The Kids will be eating Vegetables and enjoying them without the moans.
A few Vegetable suggestions are: Celery, Carrots, Capsicum and Cucumber.
Hummus
- 1 can Chickpeas
- 3 tablespoons Olive Oil
- 2 tablespoons Lemon Juice
- 2 table spoons Sesame Oil
- 2 tablespoons Water
- 2 Garlic Cloves, crushed
- 1/2 teaspoon Cumin
- 1/4 teaspoon Cracked Black Peppercorns
- 1/2 teaspoon Salt
Drain then rinse the can of Chickpeas with cold water until water is clear.
Place all the above ingredients into a Food Processor.
Do 3 or 4 short blends then with a Spatula scrape down the sides of your Food Processor Bowl.
Keep on blending to create a smooth consistency.
Transfer to a medium sized Bowl, cover with Cling Wrap, place into the Fridge until needed.
Will keep in Fridge for 2-3 days, that’s if the Kids haven’t already devoured it.
Just before serving drizzle over some Olive Oil.
