Chocolate Cupcakes

Who doesn’t like Chocolate ?

Well try these, with the addition of Yoghurt and Chocolate Chips they are so moist and delicious. We ate them for Dessert with Strawberries, Blueberries and Ice-cream.
These are great for School Lunch Boxes too, they will become one of the Kids favourites.

 

Chocolate Cupcakes

  • 1 3/4 cups Healtheries Gluten-Free Flour
  • 1 teaspoon Baking Soda
  • 1 cup Caster Sugar
  • 1/4 cup Cocoa
  • 100g Butter
  • 1 Egg
  • 1 cup Plain Greek Yoghurt
  • 1/2 cup Milk
  • 1/2 teaspoon Vanilla
  • 1 cup Chocolate Chips

 

Pre heat the Oven to 200ºC.

Cream the Butter and Sugar in a large Bowl.

Add the Egg and beat well.

Sift Flour, Cocoa and Baking Soda, then add to Bowl.

Add Chocolate Chips and Vanilla next.

Lastly add the Yoghurt and Milk.

Stir to just combine, don’t over mix.

Spoon the mixture into a 12 medium sized lined Muffin Tray.

Bake at 200ºC for 10-12 minutes or until centres spring back when lightly pressed.

Dust with Icing Sugar if serving for a Dessert or leave plain.
