Chicken and Artichokes on Crusty Bread as a light meal is so delicious, whether it’s for a middle of the day snack or in the Evening. You could make this Chicken and Artichokes on Crusty Bread Recipe as an Appetiser.
I used a Gluten Free “Pull Apart” made by Bake Works as a base to make this Chicken and Artichokes on Crusty Bread Recipe.
Don’t pull apart, instead slice the bread length ways to give you plenty of room to place your ingredients.
I have also made this Recipe using a pre-cooked Smoked Chicken Breast. The smoky flavours add a rich succulent more in-depth taste.
This Recipe is best served with the Crusty Bread still warm because if left with the ingredients sitting on top for too long the Crusty Bread may become soggy.
Chicken and Artichokes on Crusty Bread
- 1 Gluten Free Pull Apart, sliced
- 1 large Chicken Breast or a pre-cooked Smoked Chicken Breast
- 340g Jar of Artichokes
- Fresh or Bagged Rocket, enough to cover the slices of Crusty Bread
- 1-2 tablespoons Fresh Thyme Leaves, or 1 teaspoon of Dried Thyme Leaves
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Ground Coriander
- 1-2 Cloves Garlic
- 1/2 Lemon for drizzling
- Sea Salt
- Crush Black Peppercorns
- Extra Virgin Olive Oil for drizzling
In a small Pan place a little Olive Oil, Fresh Thyme, Ground Coriander, Ground Cumin, heat on medium.
Salt and Pepper the Chicken Breast on both sides, then drizzle with Olive Oil.
Place Chicken Breast into the heated pan, cook on both sides until golden, don’t over-cook. Leave to cool for about 10 minutes before slicing.
While the Chicken is cooking, slice the Pull Apart, place onto a cold Oven Tray. Grill until slightly coloured, if you brown the Bread too much it will become quite hard.
Take the Bread off the tray, place onto a Wooden Board so it doesn’t sweat. Rub over the surface of the Bread with the Garlic Clove. I then give the Bread a light drizzle of Olive Oil.
In the same Pan you cooked the Chicken Breast in, (don’t wash), the Juices and Oil from the Chicken and Herbs add flavour to the Artichokes. Place enough Artichokes, (say 2 per slice of Bread) into the Pan, fry on both sides for 2 minutes.
Slice the Chicken Breast while the Artichokes are frying.
Arrange the Crusty Pull Apart on a Platter, top with the Rocket, sliced Chicken, then fried Artichokes.
Give a good drizzle of Lemon Juice over the top.
Sprinkle with Sea Salt, a good grind of Black Pepper and a drizzle of Olive Oil.
If using a Smoked Chicken Breast, do the same as above.
