Blueberry Dessert Cake

A simple Dessert that will impress…

Blueberries are so good for us all and have many Health Benefits:

  • Help to lower Cholesterol Levels
  • Good for Brain Health
  • Low GI, this helps our Blood Sugar Levels so being good for People with Diabetes.
  • Versatile: adding to Shakes at Breakfast, Dried, Frozen, Desserts, Snacks, Salads, Fibre, Lunch Boxes. I’ve even added them to Frozen Ice-Blocks for the Grand-Children.

Only being available fresh from the Bushes in the Summer months I tend to gorge myself when they are in season.
In my opinion, there’s nothing that tastes better then Fruit freshly kissed by the Sun, warm, plump and juicy.

 

Blueberry Dessert Cake

  • 1 cup fresh or frozen Blueberries
  • 150g Butter
  • 3/4 cup Sugar
  • 2 Eggs
  • 1 tablespoon Lemon Rind
  • 1 teaspoon Vanilla Essence
  • 1/2 cup Milk
  • 1  3/4 cup Healtheries Gluten Free Flour Mix
  • 1/2 teaspoon Baking Powder

 

Preheat the Oven to 180ºC.

Line a 25cm Cake Tin with Baking Paper.

Cream the Butter and Sugar together until creamy.

Add the Eggs, Lemon Rind and Vanilla Essence and beat together until well combined.

Sift the Flour and Baking Powder together and add to the Bowl.

Mix all ingredients together and pour into the lined Tin.

On the surface of the Batter mixture dot the Blueberries.

Bake for 45-50 minutes or until the centre springs back when lightly touched. If you prefer,  insert a skewer into the middle of the Cake and if it comes out clean the Cake is cooked.

If you wish dust each serving with Icing Sugar or leave plain.

A dollop of Cream, Ice-Cream or Plain Yoghurt is delicious served along side.
