Banana Bread

Absolutely Delicious

At the moment I have noticed Banana Bread seems to be very popular.
I’ve never Baked Banana Bread before, so I thought I would give it a go and see why People love it so much.
Well all I can say is, “Simply Delicious, I am hooked”.
I did a bit of Research and wrote down some ideas and have come up with this Recipe.
Easy as, it’s cheap to make and who doesn’t have a couple of spare Banana’s in their Fruit Bowl.

I added 2 tablespoons of Healtheries Ground Linseed and 1/4 cup of Chopped Walnuts. You can leave these two ingredients out if you wish.
Mind you I think the Linseed and Walnuts gave the Bread a pleasant Nutty flavour and most importantly extra Fibre.
We ate the Bread sliced then warmed slightly with a dollop of Greek Yoghurt.
Slice, and serve plain with a Pot of Tea, a Flat White or an Expresso, your choice.

 

Banana Bread

  • 2 cups Healtheries Gluten Free Flour Mix
  • 1 teaspoon Baking Soda
  • 3/4 cup Brown Sugar or 2 tablespoons Honey
  • 115g Butter, softened
  • 1/4 teaspoon Salt
  • 2 Eggs, whisked
  • 3 Bananas, mashed
  • 2 tablespoons Healtheries Ground Linseed
  • 1/4 cup Walnuts, chopped

 

Preheat your Oven to 180ºC.

Grease a 25cm x 12cm Loaf Tin or line with Baking Paper.

In a large Bowl cream the softened Butter and Brown Sugar.

Add the mashed Bananas and whisked Eggs.

Sift the Flour, Baking Soda, Salt and Linseed into the Banana mixture, stir just enough to moisten the mixture.

Add the Walnuts and stir gently.

Pour into your prepared Loaf Tin.

Bake for about 35-40 minutes or until the middle springs back when gently touch.

Leave to cool on a Rack.
