New season Asparagus is out now in our Shops.
I love Asparagus blanched in boiling Water and served with Bacon and a Cheese Sauce. That rich flavour awakens my taste buds, yum.
I have created a quick and easy Gluten Free Salad which is lovely on it’s own, or use to accompany a BBQ, Picnic or a quick Lunchtime Meal with Friends.
- 1-2 bunches Asparagus
- 1/2 Leek, sliced thinly
- 1 Clove Garlic, crushed
- 2 Rashers Bacon, chopped
- 1 large Tomato, sliced
- 1/2 cup Frozen Corn
- !/2 cup Frozen Peas
- pinch of Ground Cumin
- 1 tablespoon Olive Oil
Wash the Asparagus under cold running Water.
Place into a Pot of boiling Salted Water and cook for a few minutes until tender.
Drain Asparagus well.
In a small Pot blanch the Peas and Corn, drain and set aside.
Into a Frying Pan add the Olive Oil and cook the chopped Bacon, sliced Leeks and Ground Cumin for about 5 minutes.
Place the Asparagus onto a Serving Platter and place the sliced Tomato to one end.
Scatter the Bacon and Leeks over the Asparagus and Tomato.
Do the same with the Peas, Corn and Parsley.
Pour over the Dressing.
- 1 1/2 tablespoons Olive Oil
- good squeeze of Lemon Juice
- 1/4 teaspoon Honey
- Sea Salt and crushed Black-pepper Corns
- punch of Ground Cumin
Place all ingredients into a small Jug and whisk together, adjust seasoning to taste.
