The Weather’s just right for Field Mushrooms
We hadn’t had Rain for a while and over the Weekend the Rain came down steadily. With the ground gulping up the moisture suddenly these little white buttons appeared in circles practically in the same spot as last year, Mushrooms.
Out with a Bucket and a sharp knife I went, it’s so exciting you never know how many you might find. Opening the gate and giving a quick squiz around the Paddock and saying to yourself, “hopefully no one else has been here before me”.
I only gather enough for a good meal, leave the rest for another day.
If you’re not fortunate enough like me and have Paddocks on your Doorstep go to the Supermarket or local Farmer’s Market.
Anywhere that sells fresh Produce, they will have a huge variety of Mushrooms available. If you wish, mix two or three different varieties together, this would add extra flavour and texture to your dish.
Field Mushrooms, Pesto and Bacon
- about 20 medium sized Field Mushrooms, more if they are tiny, cleaned and sliced
- 2 Rashers Bacon, chopped
- 1/2 cup Curly Parsley, chopped
- 1/2 cup Italian Parsley, chopped
- 1 Clove Garlic, crushed
- 25g Butter
- 2 tablespoons Olive Oil
- 1 teaspoon Balsamic Vinegar
- Lemon Juice
- Sea Salt and crushed Black Peppercorns
- Feta
- 2 slices of Gluten Free Bread
- Pesto
Toast the Bread and spread with Pesto.
Heat the Olive Oil and Butter in a Pan and add the crushed Garlic cooking for 2 minutes.
Add the chopped up Bacon and cook until lightly golden.
To this add your Field Mushrooms which you have already cleaned with a damp cloth and sliced.
Stir while cooking for about 3-5 minutes.
Add Parsley, Balsamic Vinegar, Salt and Black Peppercorns, toss to mix.
Place the Toast onto a Serving Plate, top with the Mushroom mixture.
Drizzle over some Olive Oil and a squeeze of Lemon Juice, then crumble over the Feta and some fresh chopped Parsley.
Tip
If you use predominantly Field Mushrooms you may find at the end of cooking there is a lot of Juice in the bottom of the Pan. Thicken this with about 1 tablespoon of Cornflour mixed in a little Water. The Sauce will become thick, rich and delicious or as Kids we would say,” finger licking good”.
