Blueberry Friands

Light and so morish.

I make these Friands for a Dessert, they are so delicate and delicious.
You can change the Fruit on the top if you wish. A Frozen Raspberry or Blackberry would be just as nice.
Maybe just one piece of Fruit if large because the mixture is very light and fluffy. This may cause the Fruit to sink if too heavy.

An Afternoon Tea with the Ladies would just set off these little beauties. Sitting on a Bone China Cake Stand with an English Tea served in Bone China Cups. A little dollop of whipped Cream on the side.   “Splendid M’ Lady”

 

Blueberry Friands

  • 75g Butter
  • 40g Gluten Free Flour (Healtheries)
  • 70g “Fresh Life” Almond Meal
  • Rind of 1 small Lemon
  • 3 Egg Whites
  • 1/2 cup Castor Sugar
  • 3/4 cup Blueberries
  • 1 tablespoon Lemon Juice

Preheat your Oven to 170ºC.

Lightly grease a Friand Tray.

In a large Bowl lightly melt the Butter, beat until nice and creamy.

Add the Flour, Almond Meal, Lemon Rind and Juice to the Butter, mix together.

In another clean Bowl whisk the Egg Whites with an Electric Beater until starting to stiffen.

Gradually add the Castor Sugar while beating, beat until stiff.

Gently fold the stiff Egg Whites into the Flour mixture.

Spoon the mixture into your greased Friand Tray to about 3/4 full.

The mixture makes about 10 Friands.

Dot with 3-4 Blueberries on top of each Friand.

Cook for about 30-35 minutes or until firm and slightly brown on the top.

Leave to cool in the Tray for about 5 minutes. The mixture may sink a little when cooling so don’t despair, mine do this.

Dust with Icing Sugar just before serving.

If I have made these Friands earlier in the Day and we are having them for Dessert, I warm each one by giving it a quick zap in the Micro-wave for a few seconds to warm slightly.

We have Yoghurt or Ice-cream with ours.
